Butternut Squash Apple Soup

Butternut Squash Apple Soup
Ingredients:
1 small butternut squash, peeled and cubed (about 6 cups)
3 medium apples, peeled and chopped (about 2 cups)
4 cups vegetable broth
1 large onion, chopped
2 large cloves garlic, minced
1 tbsp ginger root, finely chopped
1 tsp curry powder
1 tsp turmeric
1 tsp ground cumin
1 tsp garam masala
½ tsp cayenne pepper
1 can coconut milk
salt and pepper, to taste
Instructions:
Heat a large pot over medium heat. Add 2 tbsp water then the onion, stirring until the onion is translucent, adding more water as needed to prevent burning.
Add the garlic, ginger, and spices, stirring until fragrant, about 30 seconds.
Stir in the broth, then add in the squash and apples, stirring well. Bring the mixture to a boil, then cover, reduce heat to low, and simmer until the squash is tender, about 20 minutes.
Use an immersion blender to blend until smooth.
Stir in the coconut milk and heat until steaming. Season with salt and pepper to taste.
Top with a sprinkle of freshly ground pepper, hot sauce, or hemp seeds.
