Roasted Celeriac & Caramelized Onion Soup

This soup does require a bit of time but it's completely worth it especially in the fall when celeriacs are in abundance.  That's how this receipe came to be!

Roasted Celeriac & Caramelized Onion Soup

1 celeriac (celery root)

2 tablespoons olive oil

2 large onions, sliced

3 cloves garlic, minced

4 cups (700ml) vegetable stock

1/2 tsp salt
