Ingredients
- 1 cup cooked navy beans drained and rinsed if canned
- 1 cup pitted dates
- ⅓ cup almond butter
- ⅓ cup cacao powder
- ¼ cup coconut flour
- ¼ cup cacao nibs
- cacao powder for dusting optional
Instructions
- Add the navy beans and dates to a food processor. Process until the mixture is fairly smooth and uniform, scraping down the sides as needed.
- Add the almond butter, cacao powder, and coconut flour. Process until well combined.
- Stir in the cacao nibs.
- Let the mixture sit for 5 minutes to allow the coconut flour to absorb moisture and help the mixture firm up.
- With damp hands, roll the mixture into balls. If desired, roll each ball in cacao powder.
- Refrigerate until firm.
Notes
Date tip
If your dates are dry or firm, soak them in hot water for 10 minutes, then drain well before processing. This helps create a smoother mixture.
Texture
The mixture should be soft but firm enough to roll. If it’s too sticky, let it rest a little longer or add a small amount of coconut flour. If it’s too dry, try processing it a little longer before adding anything else.
Nut-free option
Substitute sunflower seed butter for the almond butter.
Cacao nibs
These add a pleasant crunch and a more intense chocolate flavour. For a smoother, more traditional brownie texture, you can leave them out.
Serving suggestion
These are lovely straight from the fridge, when they’re firm and fudgy.
Storage
Store in an airtight container in the refrigerator for up to 5–7 days, or freeze for up to 3 months.
